I seem to always either overpack or under pack when I'm going on trips; what are some packing strategies that can help me avoid this problem?

Before I go anywhere, I make a list of everything I need: including clothes, toiletries, electronics, etc. This helps to guide you and forces you to not pack anything that isn't on your list. Also, I try to roll everything I pack: sweaters, pants, underwear, shirts, socks, etc. This really helps to free up space in your bag and better organizes your clothes!
Writing out a list is a big help. Look at the weather before starting to pack and arrange your wardrobe that way. I like knowing the amount of days I'm going and cutting that in half by how many pieces I bring (8 days, 4 bottoms 4 stops) to mix and match. Map out what outfits to wear which days so you make sure to utilize every piece you pack.
Pack for the amount of days you will be gone for. This includes socks and underwear. Next, pack pieces of clothing that are interchangeable. So, instead of packing 7 shirts and 7 pants, only pack 3 pants and 4 shirts.
Be realistic about what you are going to wear. A lot of people will save outfits for when they travel, but never end up wearing them.
